Since Most of us know how to make Ghee Rice, I am not posting the recipe of it. Here is the recipe of Kadai Chicken.
KADAI CHICKEN
Ingredients
1. Chicken - 1 kilogram
2. Coriander seeds - 2 teaspoons
3. Cumin seeds - 2 teaspoons
4. Black peppercorns - 6
5. Whole dry red chilli - 6
6. Ginger - 2 inch piece
7. Garlic - 15 cloves
8. Ghee - 2 tablespoons
9. Oil - 2 tablespoons
10. Onion ,chopped - 1 large
11. Tomatoes, chopped - 4 large
12. Salt - to taste
13. Fresh coriander leaves - chopped 2 tablespoons.
METHOD
1. Dry roast coriander seeds, cumin seeds and black peppercorns and grind to a coarse powder. Grind red chillies, ginger and garlic to a fine paste.
2. Heat ghee and oil in a kadai, add onion and sauté till lightly browned. Add half the coarsely ground spice powder and red chilli-ginger-garlic paste and continue to sauté for three to four minutes.
3. Add tomatoes and salt and continue to sauté till the tomatoes become soft.
4. Add chicken and stir. Add coriander leaves and the remaining coarsely ground spice powder and mix. Add half a cup of water and stir.
5. Cover and cook on medium heat till the chicken is done.
Serve hot.
Note:- I used Kasoori Methi Instead of Coriander Leaves. I think Chicken with bones will be more tasty. I used 500 grms of boneless chicken and ingredients according to that.
