Ela ada is a traditional kerala dish made with rice powder, coconut- jaggery filling and then steamed wrapped in banana leaves.It is a very healthy and tasty dish which can be had as an evening snack. 

Rice powder ( roasted ) - 1 cup
Grated fresh coconut - 1 cup
Powdered jaggery - ½ cup
Cardanom powder - ½ tsp
Salt - a pinch
Banana leaves - as reqd

Melt jaggery with 2 tbspn of water over medium- low heat. Remove from pan, add grated coconut, and cardamom powder. Mix well and keep aside. In a large bowl, add rice flour and salt. Pour boiling water and mix well using a wodden spoon. Allow it to cool slightly and knead well to form a soft and smooth dough. Take a lemon sized portion of the prepared dough and place it onto a piece of banana leaf greased with little ghee. Flatten it using your fingertips to form a thin even layer of dough on it. ( If the dough is sticking to your fingers, dip your finger tips in water once in between. )Place a tablespoon of prepared filling onto 1 half of prepared layer and fold over the other half and press the sides gently to seal the edges. Repeat the process with the rest of the dough. Place this in a steamer and steam for about 10-15 minutes. Allow it to cool slightly. Unwrap plantain leaves and enjoy with tea.
