FENUGREEK LEAVES & LONG GREEN BEANS THORAN

Here is the recipe of a simple, delicious, very nutritious and healthy side dish made using fresh Fenugreek (methi) Leaves and Long Green Beans.

INGREDIENTS :

• Fenugreek Leaves, fresh – 4 bunches
• Long Green Beans – 300 gm
• Shallots – 3 to 4 nos
• Cumin Seeds – 1 pinch
• Garlic Cloves – 2 nos
• Green Chilli – 3 nos
• Grated Coconut – 1 cup
• Mustard Seeds – ¼ tsp
• Urad Dal – 1 tsp
• Curry Leaves – a few
• Dry Red Chilli – 2 nos
• Oil – 1 to 2 tbsp
• Salt – to taste

METHOD OF COOKING :

• Soak the fenugreek leaves in enough salt water for 10 minutes. This process helps to remove the pesticides if any on the leaves. Wash them in running water, rinse and chop very finely and keep aside.
• Wash and finely chop the long green beans and keep aside.
• Coarsely grind together the grated coconut, shallots, cumin seeds, garlic, green chilli using a mixer and keep aside.
• Heat oil in a wide fry pan and splutter mustard seeds. Add curry leaves, dry red chilli, urad dal and saute for few seconds.
• Add finely chopped long green beans, salt, ground coconut mixture and combine well. Close the pan and cook for 5 minutes on low flame without adding any water.
• Add chopped fenugreek leaves and toss well for 2 to 3 minutes on low flame until the moisture from the leaves ooze out and gets evaporated. Do not overcook the leaves as it may cause losing its health benefits.
• Increase the heat and stir well for 2 minutes more to make it extra dry.
• Remove from heat and serve hot with boiled rice
