Sometimes we feel lazy to enter kitchen, not in a mood to cook many side dishes, but still need to cook something. Then we can try these recipes like tomato rice, lemon rice [ recipe posted ] These are so simple to make, it takes only minutes and no need for any curries. You can pair it with pickle, pappad, salad or even with potato chips. It is great for packed lunch also.
Basmati rice - 1 cup
Onion - 1
Ripe juicy tomatoes - 3
Ginger garlic paste - 1 tsp
Turmeric powder - ½ tsp
Chilli powder - ½ tsp
Garam masala powder - ½ tsp [ optional ]
Coriander leaves - 2 tbspn
Salt - as per taste
Take cooked rice. Heat oil in a pan, add bay leaves, cinnamon stick, cardamom and cloves. Fry for seconds and add sliced onion. Saute till it becomes slightly golden brown, add ginger, garlic paste, sauté for few minutes. Add chopped tomatoes, turmeric powder, chilli powder, garam masala powder, green chillies, half coriander leaves and salt. Cook till tomatoes become mushy. Add cooked basmati / any left over rice. Mix well. Transfer to a serving plate. Garnish with coriander and mint leaves
