Chilli Gobi

step 1 :-
Cauliflower – 1 cut in to florets...
Turmeric powder – 1/4 tsp
salt - 1/2 tsp
step 2:-
All purpose flour – 5 tblsp
Corn flour -5 tblsp
Chilli powder – 1 tsp
Jeera powder – 1/4tsp
Corriander powder – ¼ tsp
Pepper powder -1/2 tsp
Ginger garlic paste – 1 tsp
Soya sauce – 1tsp
Chilly sauce – 1 tsp
Red food color – ¼ tsp
Salt – as needed
Water – 2 tblsp
Oil – for shallow frying
Step 3 :-
Ginger garlic paste – 1 tsp
Onion – 1 big dices
Capsicum green – 1 cut in to big dices
Green chilli – 2 nos
Pepper crushed – ½ tsp
Kashmiri chilli powder – ½ tsp
Chilli sauce -1 tsp
Soya sauce – 1 tsp
Tomato sauce – 1 tsp
Oil – 3tbsp
Corriander leaves for garnishing (optional) I used curry leaves.
Method
Bring water to a boil, add salt and turmeric powder, put cauliflower florets in to the boiling water and switch off the flame and let stay for 5 min , then drain all the water and keep aside.
Combine all step 2 ingredients with 2 tblsp water (do not add more water , bcoz the cauliflower release some water , so be careful while adding water) add the cauliflower florets and mix well, keep aside for 15 min.
Heat oil in a pan add deep fry the florets in medium flame.
Heat oil add ginger garlic paste, diced onions and capsicum fry for 3 min, then add all the spices and sauces, give a good stir, now add the fried cauliflower and stir well in a low flame for 5 min.
Garnish with curry leaves/spring onion/coriander leaves.
Note: Do not fry cauliflower in a high flame or low flame.
If you use high flame it will brown, in low flame it will separates the batter and florets.
