Kerala Pancake/Madakku San/Love Letter

A simple and easy snack!!
All Purpose Flour/Maida - 1 cup
Egg - 1
Milk - ½ cup
Sugar - 2 tablespoon
Salt - to taste
Water - as required
Filling
Coconut - 1 cups
Sugar - 3 tablespoon
Cardamom - 2 crushed
Ghee - 2 tablespoon
1.Mix together plain flour, egg, milk, sugar, salt, water and make a thin batter. Heat a pan and pour the batter and spread it. Cook for a few minutes & turn the side.
2.Heat ghee in a pan and add the coconut and crushed cardamom. Add the sugar & mix well. Cook the mixture till it becomes soft and juicy. Put the filling in the prepared pancakes and roll it.
