PAZHAM PORI, RIPE PLANTAIN FRITTERS WITH CRUSHED CORN FLAKES

Pazham pori or Banana fritters are made with Ripe Nendran Pazham. This banana is available plenty in Kerala and this is a lovely snack enjoyed with a cup of tea. My all time favourite snack.This banana is very healthy as it contains potassium, Dietary fiber, Vitamin C. The raw ones are used for making chips, sliced, sun dried and made powder out of, it is given to small children as baby food too. Lets start the recipe.

Ingredients :-

1 cup all purpose flour or atta
Crushed corn flakes( 1 cup)
3 tbsp rice flour
2 tsp milk
2 tsp sugar
a pinch of cardamom powder
a pinch of salt
oil for deep frying
a pinch of baking powder (optional)
1/2 cup water
a pinch of turmeric powder
Sesame seeds (optional )
1 Ripe Nenthran pazham (Ripe Nendran banana)

Method :-

In a wide bowl, mix the maida or atta,rice flour, sugar, milk, salt. Add water and make a batter out of it.
Ensure that there are no lumps in it.
Add the turmeric powder, cardamom powder, sesame seeds and mix well.
cut both the ends of banana and peel off the skin.
Cut into two pieces and slice each piece into four.
Heat oil in a kadai.
dip the pieces in the batter and roll it in crushed corn flakes and then fry them till light golden brown.
Serve hot with a cup of tea or coffee.
