This is a very old recipe. I have seen my mom making it and loved it.
She learnt it from her Kochamma (step mother).

My mother used to go around the parampu early morning looking for mushrooms. Occasionally she will get one or two മുഴകൂണ്. She will make it for lunch as an accompaniment.
Mushroom ചുട്ടത്
Ingredients: mushroom, തേങ്ങ ചിരന്ടിയത്, ulli, pacha mulagu, inchi, curry leaves and uppu.
Chop the mushroom, ginger, onion and green chillies. Mix all the ingredients in a bowl, make a "pothi" using Brown banana leaf, place under hot ashes for 15 to 20 minutes. Sprinkle with "pacha velichenna"
Valla! yummmmmmmmmmmm.
The use of "വഴങ്ാന് ഇല is to avoid the mushroom to absorb the flavour of the leaf as it gets cooked and to help with the "പൊതിയാല്". It won't break and all the juices will stay inside the pothi.
I used button mushrooms, an oven and aluminium foil to recreate the method of cooking.
I know there are many of us here without an oven. My advice is to browse through the posts saying, "cake without an oven etc." and use the same method to recreate the oven effect. It is worth trying for its flavours
