JAATHIKKA [ജാതിക്കാ] PICKLE

500 grams – Green Jaathikka flesh (cut into small pieces)
¼ cup – Olive oil
1 inch – Ginger (mince it)
5 cloves – Garlic (mince it)
Curry leaves – many
½ teaspoon – Asafoetida
3 teaspoons – Mustard seeds
4 teaspoons – Red Chilli pepper
2 teaspoons – Fenugreek seeds; powdered
½ cup – Water
½ teaspoon – Sugar
Salt – as required.
Method:
Heat the oil in a pan, add mustard seeds, then minced garlic, ginger and curry leaves.
Low down the flame and add Chilli powder, Asafoetida , Fenugreek powder and Salt.
Add Water and Jaathikka pieces and Sugar.
Boil for few minutes in low down flame.
Acutally many people waste this green outer core of Jaathikka. We can make delicious pickle with this.
