VENDAKKA PACHADI

Pachadi and is an essential side dish at any Kerala sadya such as Onam Sadya.
Vendakka / Ladies Finger (AKA Okra) is a good source of Vitamin B, K, Potassium, etc. Vendakka helps to prevent the diseases like anemia, cholesterol, cancer, asthma, diabetes and also good for bones.
Ingredients
Vendakka / Ladies finger – 10 nos
Green chilly – 5 nos (chopped)
Grated coconut – 1 cup
Curd / Yogurt – 2 cups
Cumin Seeds / Jeere - 1 tsp
Mustard seeds - 1/4 tsp
Shallots – 4 nos
For Seasoning : Mustard Seeds – 1/4 tsp
Dry red chillies – 2 nos
Curry leaves – 1 stem
Coconut oil - 4 tsp
Salt to taste
Method
Clean the ladies finger with water and slice into thin round pieces.In a grinder grind grated coconut, shallots, cumin seeds and curd together to a fine paste. When it is almost done, add mustard seeds to get crushed.Heat coconut oil in a pan and fry sliced ladies finger and chopped green chillies. Add curd, coconut mix and salt.Heat coconut oil in a pan and add mustard seeds, when it starts spluttering add dried red chillies and curry leaves. Pour this on the top of pachadi.
Tasty pachadi is ready.
