Recipe :
Ingredients :
Bringal - 1 no
Onion - 1no finely chopped
Ginger - 1 tsp chopped
Garlic - 1tsp chopped
Coriander leaves
Green chillies - 1 no chopped
Cumin powder - 1/2 tsp
Yoghurt - 2 cup (thick yoghurt)

For garnishing
Small onions - 4-5 nos
Mustard seeds - 1tsp
Curry leaves - a few
Red chilli - 3 nos
Oil - 1 tbsp

Preparation Method:
Wash the bringal and roast it over the open flame as shown in the picture.
Roast it until the skin is completely charred.
Allow it to cool. Remove the charred skin and smash the bringal using a spoon. Keep it aside
Heat the oil in a pan and add the chopped onion, ginger and garlic. Saute it until it turns transparent.
Add the smashed bringal and give a good stir
Turn of the heat and allow the mixture to cool down
In a bowl, mix the thick curd and cumin powder.
Slowly add the bringal mixture , chopped coriander and green chillies to the curd and stir it well
For garnishing , heat the oil, splutter mustard seeds, add small onions, curry leaves and red chillies. Stir it until a nice aroma comes out
Add the tempering into the bringal curd salad
Serve it with hot rice or chapatis.
