Egg n Bread Casserole By : Radz Rajan
Recipe below:
Bread - 5 slices....crumbled
Egg - 3
Onion (large) - 1 finely sliced
Milk - half cup
Sugar - 1 spoon (enough to caramelise)
Garlic finely chopped - 1/2 tablespoon..
Chuvanna cheera thoran - 2 tablespoons..if u like it you may add more.
Chilli flakes - to taste
Pepper powder - 1/2 a teaspoon
Cheddar or Parmesan cheese grated - 2 or three tablespoons
Coriander leaves or parsley - three to four sprigs
Method:
Caramelised onion: ( for layering and garnishing)
Add sugar in a pan and let it melt, once the color changes to golden brown add a little water, careful not to burn. Add sliced onion and cook it with a little butter till it turns golden brown. You should keep stirring g to avoid burning.
Mix eggs, milk , pepper powder, garlic and cheese ...just beat it lightly.
Grease the baking tray with butter, place the crumbled bread pieces as base.
Pour the egg mix on top of it, add 'cheera thoran' on top of it, final layer with caramelised onion ( just use part of the caramelised onion)
For garnish you may place tomatoe wedges, sliced green chillies, coriander leaves, red chilli flakes and cheese.
Bake the mix at 180℃ for about twenty minutes.
You can check by inserting a knife end..if it feels thick to hand .. It's cooked.
Garnish with lime wedges and resting the caramelised onion.
It seems like a long process now that I have written it down...but it took me hardly fifteen or twenty minutes to prepare it for the oven.
