Easy Spanish Omelette
Ingredients
Egg - 4
Onion - 1 (big)(1 cup)
Potato - 1 (big)(1 cup)
Cheese - (1/2 cup)
pepper - 1tsp
Parsley /Coriander leaves / Mint leaves
salt to taste
Olive oil - 50ml

Heat the oil in a nonstick pan. Fry potatoes until crispy and tender.(Note: it takes around 6-7 minutes to get 75% cooked)
when potatoes are 75%cooked, add the onion, salt and fry until transparent.(Note - it takes about 4 minutes for onion to get cooked)
switch off the flame and let it cool.

Beat eggs with salt and pepper to taste.
Add parsley /Coriander leaves /mint leaves of your taste, mix it well.
Add potato-onion mixture and mix well.
Pour half of the egg mixture into the pan, moving the potatoes and onions around the eggs using a spatula.
Spread cheese on to it. Close the lid and cook until cheese melts(Note: it takes about 10 seconds for cheese to get melted)
Open the lid and add rest of the egg mixture and spread evenly.
close the lid and cook for 2-3 minutes in low flame.
Place a big, round plate on top of the pan, and with your hand holding the plate, flip the tortilla onto the plate. Then, slide the tortilla back into the pan carefully.
cook for about 2 -3 minutes in low flame until eggs are well cooked.
The potatoes are cut into thin slices or small dice.
In a non-stick pan, add vegetable oil, ideally olive oil and sauté them for 6-7min.
when potatoes are 75%cooked, add the onion and season with salt. Stir at a moderate temperature until they are soft but not brown.
Once the potatoes are tender, turn off the flame and let it cool.
In a bowl, whisk eggs with salt and pepper. Add the cooled potato-onion mixture and mix well. Add parsley or Coriander leaves /mint leaves and mix it well.
Heat 2tbsp oil and Pour half of the egg mixture into the pan and spread evenly.
Close the lid and cook until cheese melts.
Open the lid and spread the rest of the egg mixture on it evenly.
Close the lid and cook for 2-3 minutes in low flame.
once the eggs are cooked on one side, in order to turn it, a plate should be placed over the pan so that it can be inverted.
This mixture is then returned to the pan slowly to cook the other side for about 2 -3 minutes in low flame until eggs are well cooked.
Turn off the gas and flip/slide them omelette back onto the plate and serve hot
