Turkey Dry Roast

Ingredients:
Turkey Leg(you can use whole as I did or have it butchered into smaller portions before cooking)
Onions diced – 3 nos
Tomato diced – 1 no
Ginger garlic paste
Tomato Ketchup – 2 tblsp
Turmeric Powder – 1 tblsp
Kashmiri Chilli Powder – 2 tblsp
Coriander Powder – 3 tblsp
Black Pepper Powder – 1 tblsp
Salt,for taste
Green chillies sliced (for garnish)
Tempering Ingredients: Coconut oil, mustard seeds, cumin seeds, curry leaves

Preparation: Marinate the turkey leg with 1 tsp of turmeric powder, 1 tblsp chilli powder, 1 tblsp coriander powder, salt and red color (optional) for half an hour. Make 3-4 slashes on the meat and stuff it with sliced garlic and ginger(only for added taste).

Bake it in the oven at 200 degree celsius for one hour, occasionally turning the turkey leg other side for even cooking.

Saute onions,tomato,ginger garlic paste in another pan.You may use coconut oil for extra flavor.Once the mixture is well cooked,add the remaining spice powders,and ketchup.season with salt.

Once the turkey leg is ready to be removed from the oven, set it aside to cool. Cut it with a heavy knife into smaller sections. Now add the cut pieces to the onion mixture.Coat it well with the dry gravy.Leave it to cook in low heat for another 20 minutes,until browned well and crispy.Garnish with sliced chillies and tempered ingredients over it.Serve.
