Ingredients

Rice- 2 cups
Grated coconut- 1 cup
Dried red chilli- 2, broken into pieces
Mustard- 1 teaspoon
Cumin seeds- 1/2 teaspoon
Bengal gram lentils- 1 tablespoon
Split black gram (Urad dal)- 1/2 tablespoon
Cashewnuts (Optional)- 1 tablespoon
Curry leaves- 1 sprig
Green chillies- 1
Oil- 1 tablespoon

Method

Cook the rice and keep aside.
Heat oil in a pan. Add the mustard and cumin seeds. When they start to splutter, add the bengal gram, black gram lentils, cashewnuts, red chilli and curry leaves. Saute for a few seconds and add the green chilli and coconut. Stir for a minute or two. Add the cooked rice along with some salt and mix well. Switch off heat after a minute. Serve hot with a gravy of your choice.
