Chapathi
can be stuffed with either vegetables, egg or chicken. If doing so, no
need to make subszi / curry. We can pack this for our kids tiffin. Here,
I am using vegetables and egg as stuffing.
Eggs - 2 or 3
Chappathi - 2 or 3 ( fresh made or left over )
Chopped onion - 1
Chopped capsicum - 1
Grated carrots - ½ cup
Chopped tomato - 1
Salt - to taste
Pepper powder - ½ tsp
Coconut oil - 2 tbsp
Chop the vegetables and grate carrots. Add a pinch of salt , mix together and keep aside. In a bowl, beat eggs with little salt and pepper powder. Take a non stick pan or tawa add 2 tsp of oil, pour egg batter, add chopped vegetables on top, immedietly put 1 chappathi on top of egg. Press it little with a spatula so that it can get stick with the egg.
Let it cook for 2,3 minutes. Flip it and cook the other side too. Transfer it in a plate. Roll it and cut into halves. Serve with tomato ketchup.
