This is a popular chayakada ( tea shop ) snack especially in kerala. It is best as a teatime snack with a hot cup of tea. It can be made easily at our homes with few ingredients and short time.
Maida - 1 cup
Egg - 1
Baking soda - ¼ tsp
Powdered Sugar - ½ cup
Turmeric powder - ¼ tsp
Cardamom powder - ¼ tsp
Oil - for frying
Combine maida, baking soda and turmeric powder together in a bowl. In another bowl beat eggs. To this add powdered sugar and cardamom. Mix well. To this add maida, mix well and make a smooth dough. If the dough is sticky, add little flour or pour ½ tsp of oil in it till you get a non sticky dough. Keep it aside for 10 minutes. Shape the dough into small rectangular logs. Slice them into 1, ½ inch pieces. Make 1 or 2 deep cuts at the middle of the dough with a knife. You can also make round shaped cakes by making small balls and making cut/ slit in the top of the dough.
Heat oil and then deep fry in a medium flame till it gets a golden brown colour from outside. Drain in a tissue paper. Serve with tea or coffee.
Note: Do not fry the cake on high flame the inside of the cake will not get cooked.
