VETTU CAKE :-

INGREDIENTS :-
All purpose flour: 1 + 1/8 cup
Egg: 1 ( I used a large egg)
Baking powder: ¼ teaspoon
Sugar: 1/4cup
Cardamom: 1 pod
Nutmeg powder: 1/8 teaspoon
oil: 2 cups for frying
METHOD :-
In a medium bowl mix, flour, cardamom, nutmeg powder and baking powder set aside.
In a medium sauce pot add sugar and egg and when it slightly beaten add the flour mixture to form smooth dough and set aside for 40 minutes resting. (Add only enough flour to make smooth dough).
When you are ready to fry, heat 2 cups of canola oil in a deep bottomed pan.
Shape the smooth dough into a log and then cut them into 5 inch piece squares. Make a deep cut in the center and again one opposite to the first cut.
Fry them in medium heat for 4 minutes flipping them in between to ensure uniform cooking .Make sure that oil is not too hot then outside gets burns earlier and inner dough will not be cooked. Once they are cooked remove from the oil using a slotted spoon and transfer to kitchen towel to remove excess oil.
Enjoy with a hot cup of masala tea.
MASALA TEA
INGREDIENTS :-
1 tsp Green cardamoms skinned
½ tsp. or 2 grams cloves
2.5 to 3 grams cinnamon
¼ tsp fennel seeds
¼ to ½ tsp pepper corn or ½ tsp. powder
½ tsp. nutmeg grated
2 petals of star flower / star anise
FOR MAKING TEA
¾ cup milk (180 ml)
1 cup water (240 ml)
½ tsp. masalapowder (you can increase slightly for stronger tea)
1 tsp. tea powder (adjust to suit your taste)
1 tsp. freshly chopped or crushed ginger
Sugar
Instructions:-
Making the tea powder
Add all the spices to blender jar and powder finely.
Store it in an airtight glass jar.
How to make masala tea using the spice powder:-
Bring one cup of water to a boil
Add crushed ginger, spice powder and tea powder. Boil for about 2 to 3 minutes or till the flavors are infused well.
Add milk and simmer for 2 to 3 minutes.
Filter it to the serving cups by adding sugar.
You can increase or decrease the quantity of spices based on your taste. You can add few tulsi (holy basil) leaves to this tea.
