Soya fried Roast

Ingredients
***************
1. Soya- cleaned - one bowl(boil water with 1/2 tspn of turmeric powder and 1/2 tspn salt..soak soya in it atleast for an hr.,then sqeeze it from water)
2. Mustard seeds-1/2 tsp
3. Ginger -crushed- 1 tsp
4. Garlic crushed- 1 tsp
5. Shallots -sliced- 1 cup
6. Tomato sliced-1
7. Green chilies -- 1 or 2 nos
8. Curry leaves- 1 sprig
9. Chilli powder- 2 tspn
10. Coriander powder-1 1/2 tbspn
11. Turmeric powder-1/2 tspn
12. Black pepper powder-1 tspn
13. Garam masala popwder-1/2 tspn.
For marination
*********************
1. Kashmiri chili powder- 2 tsp
2. Turmeric powder-1/2 tsp
3. salt
4.ginger garlic paste- 1 1/2 tspn
5. corn floar/rice powder- 1 tbspn
Method
**********
• Combine soya with all the ingredients for marination and keep aside for an hour
• Deep fry the soya chunks and keep it aside.
• In the same oil add mustard seeds,let it splutter.Now add ginger,garlic and,shallots.Saute for 1 or 2 minutes.
• Now add green chilies and tomato.Mix well and sauté for 5 minute.
• Add all the masalas and mix well in a low flame.
• Add the fried soya chunks and curry leaves.Add required salt.Cover and cook over medium low heat for another 10 minute.
• Add more curry leaves ,if desired.
