Vegetable Fried Rice

1.Basmati rice : 3 cup
2.Green peas : 1/2 cup(soaked for 3-4 hours if dry peas.Pressure cook it with 4 whistles)
3. Carrot : 3
4. Cardamom : 2-3
5. Cinnamon :2
6. Cloves : 3
For garnish:
7. Onion : 1( thin sliced)
8.Cashews and Raisins
9. Ghee : 4 tbsp
10. Water : 4 1/2 cups
Preparation:
1. Wash basmati rice well. And let the water drain off
2.Add 2 tbsp of ghee in a pressure cooker.Add cinnamon,cardamom and cloves and stir . Add the water drained off basmati rice. Add water and salt.( ideally 1 cup rice needs 1 1/2 - 1 3/4 cups of water). Wait for 1 whistle.
3.Cut carrots in cube shape. In a pan add 1 tbsp of ghee, salt ,add carrots and cook well.
4. Once carrots are cooked well add green peas to it and stirring well
5. In a pan , add ghee and get onions fried, keep aside
6.In same pan fry raisins and Cashews and keep aside.
7 . Now keep the cooker in low flame,add green peas and carrots and mix well.
Switch off flame
8. Garnish well with onion, cashew and raisins.
