Easy Mango Pickle

This is so simple to make, you don't have to be an expert.It tastes delicious.Store in a bottle and use after 2 or 3 days...this is to allow all flavours to meld together.
Ingredients
Raw mangoes - 1 kg chopped
Salt - 1/4 cup
Chilli powder - 2 tbsp
Kadukuparippu/ mustard dal - 2 tbsp
Uluva podi/ fenugreek powder - 1/2 tsp
Kayam /asafoetida - 2 tsp
Mix together the above ingredients and keep for 1or 2 hours .Then follow this procedure :
Sesame oil/ Nallena - 1/4 cup
Mustard seeds - 1tsp
Chilli powder - 1 tbsp
Vinegar - 1 tbsp
Heat the oil, splutter the mustard seeds. Lower the flame , add the chilli powder and stir till it changes colour. Cool it and add to the marinated mangoes along with vinegar. Store in an air tight bottle when completely cool.
Note : If you don't have mustard dal, just toast some mustard seeds and pound it gently .It should not become a powder.
