Lauki Vanpayar Thoran

Lauki is also called Bottle gourd or doodhi .It tastes pretty bland by itself but if you add vanpayar to it , it is very tasty
Bottle gourd - 1 chopped fine
Big onion - 1 chopped
Green chili - 2 slit
Vanpayar - 1and 1/2 cup cooked
Salt as needed
Cheriya ulli - 3 sliced
Curry leaves 2 sprigs
Mustard seeds -1/2 TSP
Oil - 1 TSP
Coconut mixture
1 cup coconut grated + 2 garlic + 1 chilli + 1/4 tsp turmeric + 1/2 tsp jeera..... Pound lightly.
In a hot pan ,add oil and splutter mustard and add cheria ulli and curry leaves .....let it brown a little , then add the lauki and stir well. Add in the onion , chilli , salt and coconut mixture and mix .Cover slightly and cook allowing steam to escape. Add in the vanpayar and mix well. (As lauki has a lot of water content you may have to open the lid towards the end and cook till it dries up ...stirring in between )
You may do the tadka at the end if wished.
