Kootucurry.
Ingredients ( would be enough for 3 people)
Potatoes- 5 cut into cubes
Shallots- 2 cut into cubes.
Green chillies-2
Red chilli powder- 1 teaspoon
Coriander powder- 2 teaspoons
Fennel powder- 1 teaspoon
Turmeric powder- 1 pinch
Whole spices- Cloves 5 & Cinnamon stick
Coconut milk- 1 can
Mustard seeds, fenugreek seeds & curry leaves -for seasoning.
Coconut oil
Method
Heat oil in a pan. Fry all the powders till they release a nice aroma. (Take care not to burn them). Add shallots, potatoes & green chillies. Saute & coat them well with the powders. Add salt to taste , whole spices & just enough water to cover the potatoes. Cook it in a low flame.
Once the potatoes are done, add in the whole can of coconut milk. Add a little water to adjust the consistency if required.When it starts simmering, take it off the hob & finally add the seasoning.
Easy peasy kootucurry is ready.😀
I used a little bit of ghee for the seasoning rather than coconut oil.
